What are you eating today?
Re: What are you eating today?
Supper yesterday was a Wrose pizza with mediterranean veg and mozzarella, and a big pile of Lamb’s Lettuce.
Today’s supper will be shoulder of lamb cooked in a lidded enamel roaster with garlic, onions, chunks of winter squash and potatoes tossed in light olive oil and surrounded by branches of fresh rosemary.
It’ll be accompanied by Cavolo nero, mint jelly and gravy made from the juices in the roaster.

‘Proper’ Shepherd’s Pie made with the minced remains of yesterday’s roast lamb shoulder (with some minced onion and carrot and a few frozen peas and some gravy left from yesterday watered down a bit). Served with buttered green cabbage.
Re: What are you eating today?
I don’t like shepherds pie but that looks amazing
Re: What are you eating today?
Thanks Ameew. It tasted good too. A small portion left … are you sure …?
Re: What are you eating today?
I like a good shepherd's pie!
Tonight we had cauliflower cheese with a bit of the focaccia bread. There were four portions of cauliflower cheese left over and these are now in the freezer.

I picked up some reduced smoked salmon steaks so we will have those tonight with baked potatoes and salad.

Re: What are you eating today?
I was out with a friend for a pub supper last night. We like it there because they make their own food.
We shared a starter of baked potato skins covered with nachos ingredients - a good salsa, sour cream and guacamole. We both wanted to lick the plate. It would be so easy to replicate at home - I may well do.
I had lasagne next - it was very, very good. How I waddled home I don't know. My friend had fruit crumble and custard as well .
So nice to just sit back and be fed sometimes.

The dentist told me to eat soft food for the next 48 hours. I have just eaten a Waitrose bread and butter pudding. Serves 4.
Re: What are you eating today?
Chicken Tikka Masala (using Sharwoods paste) with pilau rice, naan and papadums.
Re: What are you eating today?
leek, cauliflower and carrot cheese.
Re: What are you eating today?
Cod loin with pesto and sweet potato mash.
Easy, healthy, and tasty. (Plus larger size portions of veg). After the first time, I haven’t bothered with the mint.

Re: What are you eating today?
Cottage pie tonight, with cabbage.
J is at work for the whole of April, much to his disgust, so I have made it already and I'm off to yoga.
I suppose one of us has to replenish the bank account after the Big Trip.

Butcher’s Cumberland sausages from the Suffolk farm shop we went to last week, with oven fries and canned sweetcorn. DS is having baked beans with his as we only had one tin of corn and he prefers beans anyway … as long as they’re Branston

Fried up some mince with tinned tomatoes and flavours. Poured it over some pasta. Quite tasty. Even the paprika was mild enough for OH to manage.

Re: What are you eating today?
We are going for an early evening beer tonight so I guess we will have the other half of the cottage pie when we get back.
Plus more cabbage
I bought it last weekend, we have eaten some every blinkin day since, and I made coleslaw.
It doesn't seem to be getting any smaller.

If life gives you cabbage, make kapuska…
Re: What are you eating today?
I really didn't know what I fancied for the weekend - I usually batch cook on a Saturday, and have part two on the Sunday - I like to go for a couple of pints and a bit of daft talk on Early Sunday afternoons, and really don't fancy getting the pans out after I've walked back home. Anyway - I chanced upon this, and it ticked all the boxes .

Yes that’s a good one Gruney… I’ve done it (or variations on it) a few times … must do it again before too long.
Fridays supper was breaded cod with baby potatoes and frozen peas, and yesterday we had homemade lasagne.

Looks good, gruney.
What would you use instead of Vermouth (assuming you didn't want to purchase a whole bottle. All the bottles in my alcohol cupboard are things I don't want to drink left over from obscure recipes!).
